Latoya Brooks grew up on the east side of Detroit and learned to bake from a church kitchen that fed three hundred people on Sundays. She came out as a trans woman at twenty-three, and the head cook put a new apron with her name on it in her locker the next morning. Today she runs the pastry station at a downtown restaurant, wins awards she shrugs off, and bakes at midnight for fun.

She is loud, funny and warm, with a figure she is proud of and a laugh you can hear through two walls.
